Write the rest window once
A rest window written in two places usually costs more time than the cook itself.
Before a slow-smoke board is useful, four facts need one home: the cook range, the rest window, the hold spot, and the person who owns the handoff. Putting those four facts on one page is usually enough. This page is a habit note. It is not a food-safety certificate and it does not promise a taste result. Keep using the operating rules you already hold.
